Chicken Croissant Sandwiches

Audrey, my Mother-in-law, is the strongest and most no nonsense woman I have ever met.  Life on the farm wasn’t easy but she handled each difficult situation with strength, ingenuity, and more than a little humor.

Mother's day is a wonderful time to tell your mom (and mother-in-law) how much you appreciate that she is a part of your life!

Chicken Salad Croissant Sandwich
For Mother's Day, here is a favorite light lunch that I have served my family for years.
The filling can be made up to 24 hours ahead.

  • 1 pound cooked chicken, cut up
  • ½ cup diced green onion
  • 1 cup sliced green grapes
  • ½ cup chopped celery
  • ½ cup Appel Farms Yogurt
  • 3 Tbsp orange juice
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 4-6 crescents

In a large bowl, combine the chicken, green onion, grapes, yogurt, orange juice, salt, and pepper.  Cover and refrigerate approximately one hour or more to let the flavors blend.
Serve chicken salad on croissants.
This recipe is easy to adapt and change.  You can substitute sliced almonds for the celery, diced apple for the grapes, or add in dried cranberries or dried cherries.
