Mini Quiche

Pastry Shells
½ cup butter or margarine, softened
1/3 cup Fromage Blanc
1 cup all-purpose flour
½ teaspoon salt

In a mixing bowl, cream butter and Fromage Blanc. Add flour and salt; beat until well blended. Shape into 24 balls; cover and refrigerate for one hour. Press balls onto the bottom and up the sides of greased miniature muffin cups.

Filling
½ cup grated sharp Gouda cheese
4 slices bacon
2 eggs, slightly beaten
¾ cup Fromage Blanc
¼ cup milk

Sprinkle cheese evenly in pastry shells, sprinkle bacon over cheese. Combine eggs, Fromage Blanc and milk, blend thoroughly, pour mixture over bacon (you may have extra).

Bake at 350 degrees for 30-35 minutes or until golden brown. Let stand for 5 minutes before serving. Refrigerate leftovers.
