The 500 cow dairy is managed by Rich Appel.  He works closely with animal nutritionists and agriculture specialists to maintain the dairy in the healthiest manner possible, not only to produce the highest quality milk, but for the health of the land and animals.  He considers managing the land to be a commitment for now and for the future.

 

John Appel manages every aspect of the cheesemaking, from pasteurizing the milk to distributing the cheese.
